Paleo Strawberry cake – gluten free

  • 1/2 cup coconut flour
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 4 eggs
  • 1 very ripe banana
  • 1 Tbsp pure vanilla extract
  • 1/3 cup coconut oil, melted
  • 1 heaping cup strawberries, diced fine (8-10)



  1. Preheat oven to 350
  2. Combine the coconut flour, baking soda and sea salt in mixing bowl
  3. Add the remaining ingredients (minus strawberries) to a food processor
  4. Process thoroughly
  5. Pour wet ingredients into dry ingredients and whisk
  6. Fold in the diced strawberries
  7. Pour batter into lightly greased cake or loaf tin
  8. Bake for 18-20 minutes

You can serve it warm or cold, topped with a strawberry-coconut cream or a coffee-coconut cream. I fancied it up with some fried bacon for breakfast!
